I have a cold right now, and I should be relaxing and resting. However, I saw a recipe in Parade magazine for Jewish potato pancakes. I remembered someone, probably my grandmother, making German potato pancakes when I was a child. Both my grandmothers are Volga German, or German from Russia, and I grew up with lots of wonderful starch-filled cooking. I combined a number of recipes this afternoon to create this one. I decided to add sweet potatoes. The ratio is one-third sweet potatoes to two-thirds potatoes.
Perhaps it’s my last name (Cheeseman), but I love cheese. Years ago I found a macaroni and cheese recipe in one of my mother’s cookbooks. I adapted it and made it my own. Feel free to adapt this recipe to your taste buds. That’s what cooking is all about.
