My name is Gina-Marie Cheeseman and I am a freelance writer and journalist. I write about sustainability, healthy living and environmental issues. I am also a complete and total “foodie.” I eat a mostly vegetarian diet which does not contain any soy products. My reasons for not including soy products, including tofu, are because 98 percent of all soy is genetically modified (GMO) and soy that is highly processed, like tofu, is not good for you. I don’t make “mock” meat recipes. I find vegetarian recipes that I like and make them my own.
