I have a cold right now, and I should be relaxing and resting. However, I saw a recipe in Parade magazine for Jewish potato pancakes. I remembered someone, probably my grandmother, making German potato pancakes when I was a child. Both my grandmothers are Volga German, or German from Russia, and I grew up with lots of wonderful starch-filled cooking. I combined a number of recipes this afternoon to create this one. I decided to add sweet potatoes. The ratio is one-third sweet potatoes to two-thirds potatoes.
- Two good sized potatoes
- One large sweet potato
- 3 tablespoons of flour
- One large egg
- Salt, pepper, garlic powder, and Mrs. Dash Southwest Chipotle Seasoning Blend to taste
- Olive oil to line a frying pan.
Grate the potatoes and drain all excess water by putting them in a towel, wrapping it around them and squeezing. Add the other ingredients. Put olive oil in the frying pan. Make little balls out of the potato mixture and flatten to make small pancakes. Fry the pancakes until both sides are brown. The pancakes pair well with a hearty soup such as a borscht.
